The Peking Duck is one of them, as it is a widely famous duck dish from Beijing. It has been cooked well since the dawn of the Chinese imperial era. Duck’s meat is valued highly for its thin, crisp skin, with authentic versions of the dish serving mostly the skin and little meat, sliced in front of the diners by the cook. Ducks bred specially for the dish are slaughtered after 2 months of life and are well seasoned before being roasted in a closed or hung oven. Usually we spice the meat with scallion, cucumber and sweet bean sauce with pancakes rolled around the fillings. Sometimes pickled radish is also inside, as well as the hoisin sauce!
